Aceto Balsamico Tradizionale di Modena DOP from Acetaia Malpighi (100 ml) is an exceptionally aged, naturally fermented balsamic vinegar with a protected designation of origin (DOP). It ages for at least 12 years in small wooden barrels made from various types of wood – including oak, cherry, and chestnut. The result is a syrupy, deep dark brown vinegar with intense aromatic depth and balanced sweetness.
This product comes from the range of FoodConnection, a provider specializing in exceptional food for fine dining since 2003, and is now also offered for ambitious home cooks.
About the Manufacturer
Acetaia Malpighi is a traditional family business from Modena, Italy, that has been producing authentic Aceto Balsamico Tradizionale di Modena DOP since 1850 – over five generations. The original recipe dates back to Pietro Malpighi, who passed it on to his son Augusto, and has since preserved the purity and authenticity of the product.
Today, Massimo Malpighi leads the company in the fifth generation and is recognized as an ambassador of Italian craftsmanship. He has held the title of Cavaliere dell’Ordine al Merito della Repubblica Italiana since 2015 for his contributions to Made in Italy.
The vinegars age in over 3,000 wooden barrels, some of which are over 200 years old – including barrels made from chestnut, cherry, oak, and mulberry wood, which refine the vinegar in a characteristic way over decades – and some are from Napoleon's collection.
Acetaia Malpighi combines traditional craftsmanship with contemporary design: The iconic 100 ml glass bottle was designed by the renowned designer Giorgetto Giugiaro and is legally approved for DOP use.
