The manufacturer, Azienda Caravaglio, goes to great lengths to preserve the aroma and color of the capers during production. Harvesting takes place in the cool early hours of the morning between 4.30 a.m. and 10.30 a.m. or in the evening after 5.30 p.m.
After the harvest, the capers are spread out on sheets in the shade to cool for a few hours. This is very important because if they were immediately mixed with salt, they would completely lose their color nuances, their precious and unique fragrance, their aroma and their unmistakable taste.
Sea salt is then added to the capers. The caper-salt mixture is made in set rhythms Stirred for a month until it is ready for sale.
Capers always have to be desalinated for a few minutes under running water before use, then squeezed well and finally chopped before use so that the aroma can develop.
