Product Description 5-Year Aged Soy Sauce 200 ml

This extraordinary Shoyu Soy Sauce ages for a full five years in traditional cedar barrels. During this long period, it develops its complex aroma: a pleasant saltiness, strong umami, and a dense, naturally creamy consistency. Rich in Moromi (soy mash) and with fine tannins, it offers an intense taste experience that goes far beyond standard soy sauces. Thanks to its elegant packaging, it is also an excellent gift for gourmets and lovers of authentic Japanese cuisine.

This product comes from the range of FoodConnection, a provider specializing in exceptional foods for fine dining since 2003, and is now also offered for ambitious home cooks.

 

Usage

The 5-Year Aged Soy Sauce should not be used for cooking. Instead, it is intended as a Finishing Sauce and is added to the dish only at the very end. It enhances vinaigrettes, sushi, and sashimi, especially from fatty tuna or yellowtail. Also, in combination with other soy sauces – as is traditional in Japan – it opens up new taste experiences and allows for the creation of a personal balance. Whether pure or creatively mixed: this Shoyu sauce adds refined accents in high-end cuisine.

 

ABOUT THE MANUFACTURER

The brewery Kamebishi-Ya has a history dating back to 1753. Founded by a former samurai, it is still today the only manufacturer in the world that preserves the traditional method “Mushiro Kôji”. In this process, the Kôji is cultivated on mats made of rice straw and bamboo – a centuries-old craft that is passed down orally from generation to generation. Today, mother and daughter Okada, the 16th and 17th generation, run the family business in Hiketa, Kagawa Prefecture (Shikoku).

Kamebishi stands for pure craftsmanship, carefully selected soybeans, and patience. The result is soy sauces of unparalleled quality, which, depending on the aging process – from 2 to 38 years – impress with complex flavors, deep umami strength, and a velvety texture.
