The outer batter was made from rice flour and wrapped around the ice cream. It's soft and elastic. The ice cream inside has a creamy consistency.

For the Vanilla ice cream mochi one of the best vanilla qualities from Madagascar was selected. This variety is gluten free.

What are mochis?

Mochis are Rice cakes, a delicacy of Japan made from glutinous rice. They are available in a wide variety of variants. Often they are filled with something sweet, such as a sweet bean paste. However, the combination of ice cream and mochi is not a traditional Japanese variant. They were developed in America in the 90s of the last century and are a kind of "fusion" between American and Japanese desserts.

The siblings Howard and Vivien Wong founded in 2010 Little Moon in the UK. Until then, mochis were produced according to traditional Japanese recipes in her parents' bakery. In the early years, the innovative ice cream mochis were only delivered to restaurants in Great Britain.
