Normally, when grinding grain, the wheat germ is separated from the bran to extend the shelf life. The big industries are forced to process flour without wheat germ, while the artisanal processing of the antique noodle manufacturer Morelli enables the fresh wheat germ to be fed back into the bran.
The antique noodle factory Morelli was founded in 1860 and is a family business. After five generations, it is now the siblings Lucia, Antonio and Marco Morelli who continue the family tradition. The pasta manufactory produces a wide range of specialties, it produces simple products using ancient artisanal techniques and avoids the use of preservatives and colorings.
- Prepare 1 liter of water for every 100 grams of product to be boiled in a large saucepan.
